Crispy Smashed Potatoes
Ingredients (serves 2)
Small bag of small / fingerling potatoes
olive oil
salt and pepper
Equipment
1 baking sheet
Prep
Preheat oven to 450F
Place the potatoes in a large pot and fill it with cold water. Bring the water to a boil until they are fork tender (10ish minutes). Strain the potatoes and let them cool slightly.
Bake
Drizzle olive oil lightly on the baking sheet and dump potatoes onto baking sheet, mixing to ensure potatoes are covered.
Using the bottom of a glass (or whatever you want) smash potatoes as flat as possible, without destroying them. [the flatter they are they crispier they will be and will cook more evenly]
Drizzle a little bit more olive oil and spinkle salt and pepper to taste.
Place the sheet in the oven and roast the potatoes for 25 to 30 minutes, until golden and crispy. Remove and serve immediately.
