with Cheese
French Onion Soup Burgers
Ingredients (serves 2)
12 oz ground beef
8 oz beef stock
2 buns (ciabatta, regular hamburger buns, or whatever)
2 slices swiss or gruyere
2 tablespoons dijon mustard
1 yellow onion
2 tablespoon butter
1 tablespoon flour
olive oil, salt, pepper
Equipment
2 medium pans, 1 w/ lid
Caramelize Onions
Heat butter in medium pan over medium-high heat. When butter is foamy, add onion, stirring occasionally, until onion is light bright and softened about 6 minutes.
Add 1 tablespoon water and reduce heat to medium. Cook stirring continuously, until golden brown and very soft, 5 minutes more.
Form Burgers
While onion cooks, season beef w/ salt and pepper. Using hands, mix well, then form into 1/2 inch thick patties. Create a dimple on the top of each burger.
Make Onion Gravy
Add flour to pan with onion over medium heat and cook, stirring vigorously, until flour is no longer visible, about 2 minutes.
Add beef stock and bring to a boil over high heat, then reduce heat to medium high and simmer, stirring occasionally, until gravy is thickened and reduced by 2/3, 2-3 minutes.
Remove pan from heat and season w/ salt and pepper.
Sear Burgers
Heat 1 teaspoon olive oil in a separate medium pan.
Once shimmering, add burgers and sear, without flipping, until browned on bottom, about 4 minutes.
Flip and continue searing until browned and medium rare, 3-4 minutes.
Spoon onion gravy over burgers, then top with cheese. Cover pan and cook until cheese is melted, 1-2 minutes.
Plate Burgers
Put buns cut side down onto pan from burgers to toast over medium heat, 2 minutes.
Spread mustard over cut sides.
Top bun bottoms with french onion soup burgers, then add remaining gravy.
