Roasted Jalapeno and Chorizo Queso

Ingredients (serves 6-8)

  • 6 large jalapenos

  • 1 tablespoon vegetable oil

  • 1/2 pound ground chorizo

  • 3/4 cup diced onion (1 medium)

  • 3/4 cup diced tomato (2 plum or 1 large beefsteak)

  • 1 pound velveeta cheese

Equipment

baking sheet; heavy skillet


Prep

  1. Pre-heat oven to 500 degrees

  2. Halve and seed 5 of the jalapenos

  3. Dice onion and tomato

Roast Jalapeno

  1. Toss jalapeño w/ vegetable oil in a bowl; then arrange on baking sheet skin side up

  2. Roast until very dark, about 15 minutes; then let cool

  3. Finely chop roasted jalapeno, mince the last unroasted jalapeno

Cook Chorizo

  1. In a heavy skillet, cook chorizo and onion over medium-high heat 7-9 minutes

  2. Stir in the tomato and roasted jalapenos, then add velveeta and reduce heat to medium-low 2-3 minutes

  3. Add the raw jalapeno and stir until the mixture is smooth
