Pork Nasi Goreng

with spicy cucumber and lime

Pork Nasi Goreng w/ Spicy Cucumber and Lime

Ingredients (serves 2)

  • 1/2 cup jasmine rice

  • 10oz ground pork

  • 1/2 cup corn

  • 1 egg

  • 1 smallish cucumber

  • 1 lime

  • 1 scallion

  • 2 cloves garlic

  • 1/2 cup corn

  • 2 oz soy sauce

  • 2 oz honey

  • 4 oz chili paste (aka sambal oelek)

Equipment

1 smalish rice potw/ lid, 1 big pan, canola oil, salt and pepper


Cook rice

  1. in small pot, combine rice, 3/4 cup water, and 1/4 teaspoon salt; bring to boil over high heat

  2. Stir once, reduce eat to medium low, cover pot, simmer until water is fully absorbed 10-12min.

  3. Remove pot from heat and let stand, still covered, for 10min. Fluff rice w/ a fork, then set aside uncovered to release steam (need to do this to help fry it later)

Cook pork

  1. While rice cooks, heat 2 teaspoons canola oil in a large nonstick pan over med-high heat.

  2. When oil is shimmering, add pork and season w/ little bit of salt and pepper. Cook, breaking up meat until cooked through and no longer pink about 5min.

  3. Transfer pork to large boil and set aside, discard excess fat.

Prep other ingredients

  1. While pork cooks, halve cucumber then cut into 1/4 inch half moons. Halve lime, cut remainder into wedges for serving. Roughly chop cilantro, discarding stems. Trim and discard scallion roots and thinly slice - keeping whites and light greens separate. Mince garlic.

Saute vegetables

  1. Return pan from porn to medium high heat w/ 2 teaspoons canola oil. When oil is shimmering, add corn, garlic, and scallion whites and light greens.

  2. Saute, stirring, until fragrant and beginning to caramelize 3-5min seasoning w/ a little bit of salt.

  3. Remove pan from heat

Finish nasi goreng

  1. Return pan from vegetables to medium-high heat w/ 2 tablespoons canola oil.

  2. When oil is shimmering, add rice and press down into a single layer.

  3. Cook without moving, until golden on bottom 3-4min.

  4. Add soy sauce, honey, vegetables, and pork. Stir to combine. Cook, stirring 2 minutes.

  5. Add egg and scramble, stirring constantly, 1-2min then remove from heat.

  6. Add juice from 1/2 of lime

Plate

  1. Add salt and pepper to taste.

  2. In a medium bowl, stir together cucumber and sambal. Transfer to serving plates, top w/ spicy cucumber, cilantro, and scallion dark greens. Serve with lime wedges for squeezing over.
