Spaghetti w/ Anchovies, Garlic, and Red Pepper
Ingredients (serves 2-4)
1 lb spaghetti
1 tin anchovies
2 tablespoons capers
1 tablespoon red pepper flakes
6 tablespoons olive oil
8 garlic cloves roughly chopped
2 tablespoons chopped parsley
Parmesan for grating
Equipment
1 pot for pasta, 1 medium pan
Pasta
Cook pasta as directed
The Good Stuff
Warm olive oil in medium pan over medium heat; cook garlic for 2 minutes (don’t let it brown).
Add anchovies, capers, and red pepper and cook for another minute then turn off heat.
Finish
Drain pasta, reserving some pasta water.
pour in garlic mixture, add parsley and parmesan then mix.
