Szechuan Pork & Stringbean Stir-Fry
Ingredients
1 thumb ginger
6 oz stringbeans
1 scallion
1 cup jasmine rice
1/2 oz peanuts
10oz ground pork
2 tablespoon szechuan paste
4 tablespoon sweet soy glaze
Prep
Peel and mince (or grate) ginger. Trim stringbeans, cut into 2 inch pieces. Trim and thinly slice scallion, separating whites from greens.
Cook Rice
Melt 1 tablespoon butter in a small pot over medium high heat. Add half the ginger, cook stirring until fragrant 1 minute.
Stir in rice, 1and1/2 cups water, and a big pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18minutes. Keep covered off heat until ready to serve.
Cook beans and coat peanuts
Place strinbeans in a medium microwavable bowl with a splash of water, cover with plastic wrap. Microwave until tender 1-2 minutes. Drain.
Heat a large pan over medium high heat. Add peanuts, 1 teaspoon sugar, and 2 tablespoon water. Cook stirring until water has evaporated and peanuts are coated and lightly toasted, 3-5minutes. Turn off heat, transfer peanuts to a small bowl. Wash out pan.
Cook Pork
Heat a large drizzle of oil in pan used for peanuts over medium high heat.
Add pork and cook, breaking up meat until browned 4-6minutes.
Finish Stir Fry
Stir stringbeans, scallion whites, remaining ginger, and 1 teaspoon sugar into pan with pork. Cook scraping up any browned bits from bottom of pan until ginger is fragrant and pork is cooked through 1-2minutes more.
Stir in szechuan paste, sweet soy glaze, and 1/4 cup water. Cook, stirring until everything is coated 1-2minutes.
Fluff rice with a fork and season w/ salt and pepper. Divide between bowls and spoon stirfry over rice, season w/ salt and pepper. Sprinkle with scallion greens and peanuts.
